Slacker!


Uuugh! I don't WANT to warm up the car for 20 minutes and schlep off to the gym! I know it will be over soon and probably be the only "cold" snap this winter, but I'm still whiny and slacking. At least it only feels like its -34... ha! what the heck is that supposed to mean anyway. Also, I suspect somebody's humidity monitor is wonky because the only water in the air is frozen solid and floating around as our famous "ice fog".

I'm reminding myself that "90% is diet and the other half is exercise" and trying to get back on track after the carbo-riffic vacation. Yesterday I braved the 6PM grocery crowd and spent the whole evening cooking. For some reason they didn't have ground turkey so I had to hack up turkey legs. Turkeys have tendons like skewers! That took forever. The cat who is ancient and usually asleep must've smelled blood because she was sitting in the kitchen purring and got a few chunks of turkey for her patience. In the end I made a new batch of Otter Soup, some stuffed peppers and had a salad with salmon for dinner. The peppers came out great! I have one for lunch:
Veggie Stuffed Peppers
2-3c finely chopped cabbage
2 portabello caps
1/2 lg onion
2 fresh mild turkey sausages squeezed out of casing
green peppers
coconut oil for cooking
spices (I used garam masala for an Indian vibe, mexican spices would be good too)
Finely chop all veg (except peppers) and squish the sausage into small bits. Cook slowly in skillet ~30m til soft. Add spices. The cabbage makes this rather sweet so taste and correct seasoning (i.e. salt!) before stuffing peppers. Stuff peppers. Bake at 350 until peppers are tender. You could also top them with cheese for the final bake if you are into that sort of thing.
